After three decades of serving "International Cuisine with a Twist" in the heart of Antigua, we're embarking on something beautifully new – our very first Menú de Degustación. This tasting menu in Antigua Guatemala represents more than just another menu; it's Chef Allan's most personal culinary statement yet, and we couldn't be more excited to share it with you.

Picture this: you're settled into one of our intimate dining spaces – perhaps La Cueva with its vaulted stone ceilings, or maybe the romantic ambiance of our main Sala. The evening stretches ahead of you, unhurried and full of possibility. This is exactly how a tasting menu should unfold.


"Este menú celebra la esencia de Guatemala a través de ingredientes locales —algunos redescubiertos— y técnicas como fermentación y cocción lenta," Chef Allan explains. "Cada plato expresa fuego, acidez, dulzor y memoria. Es un recorrido sensorial creado con técnica, pasión y respeto por nuestra tierra. Un homenaje colectivo desde la cocina."

Six Courses, Countless Discoveries: Antigua Guatemala's Most Intimate Tasting Menu

The beauty of a tasting menu lies in surrender – you're no longer choosing what to eat, but trusting the chef to take you somewhere unexpected. And Chef Allan's vision is deliciously surprising:


You'll begin with Falafel Ixchel, where ancestral beans meet Mediterranean technique in ways that somehow make perfect sense. The Corazón de Huerto transforms humble garden vegetables into something poetry-worthy, while Camino Salado al Volcán brings volcanic heat through glazed shrimp and pineapple mole – yes, pineapple mole, and it's genius.

Sol de Maíz pays homage to our most sacred grain through braised beef cheek in dark cacao broth – a dish that tastes like Guatemala itself. The playful Sangre de Sandía offers a surprising palate cleanser, before Flor de Caña y Melocotón brings everything to a sweet, rum-kissed conclusion.


Each course comes paired with carefully selected wines that don't just complement the food – they complete the story each dish is telling.

Some ingredients have been rediscovered specifically for this menu, others transformed through fermentation and slow cooking into something entirely new yet deeply familiar.

We're now accepting reservations for this extraordinary experience, served Tuesday through Saturday evenings. Please note that we'll need your reservation by 3:00 PM to ensure our kitchen has proper time for the careful preparation each dish requires. At Q580 with wine pairings or Q355 without, though we genuinely believe the wines are essential to the complete story Chef Allan is telling.
