We Are Always Looking for an Excuse

Every table was gone before the doors opened.
On the fourteenth of August, La Cueva became a tablao. A dance floor laid over the old stone. White linen, red carnations, candles burning low. Guitars tuning in the corner while the last glasses were poured.
Then the first compás, and the room went quiet in that particular way a room goes quiet when everyone realizes at once that something is about to happen.
A dancer in red crossed the floor. Three guitars found each other in the dark. Chef Allan Ruiz and his team cooked straight through it, flames going up from the pan on one side of the stone while the music played on the other. Out by the pool, boards of cheese and cured meat with candles burning the length of the water, and people drifting out between sets with plates in their hands.
And somewhere between the first falseta and the last, a room full of neighbors was clapping in time, together, without anyone having asked them to.
That is the whole thing, really. The arches do not just carry the music. They hold you inside it.
Any excuse
Here is something true about this house. We are always looking for a reason to make something.
A wine worth drinking. A musician passing through. A season, a saint's day, a Tuesday that looked too quiet. Since 1992 the pattern has not changed. Somebody has an idea, the room says yes, and a few weeks later forty people are sitting down to something that did not exist before.
This time the excuse was Spanish wine and a flamenco group looking for old stone to play in. We did not need much convincing.
This one is for you
We know how Panza Verde reads from the outside. Somewhere you take your parents when they visit. Anniversary dinner, once a year, tablecloth and all.
That is not really what this is. This is a room in your neighborhood with live music four nights a week that, every so often, does something like the fourteenth of August. You do not need an occasion. You need a Wednesday.
